Avoca Lentil and Nut Loaf

Notes: 

Serves 6-8
If you overcook the orange lentils it will be too watery and will take ages to cook

Ingredients: 

50g French green lentils (Puy lentils)
300g orange lentils
50g (4 tablespoons) unsalted butter
1 large onion -- peeled and chopped
3 carrots -- peeled and diced
1 large red bell pepper -- diced
3 celery sticks -- diced
6 cloves garlic -- peeled and chopped
1/2 fresh red chili -- deseeded and finely chopped
2 heaping teaspoons ground cumin
75g bread crumbs
150g cheddar cheese -- grated
75g roasted nuts, such as pistachios, hazelnuts, peanuts -- chopped
6 eggs
