4 strips of bacon, diced
1/2 onion, finely diced
2 cloves garlic, crushed
2 cans of black beans, drained well
1/8 cup honey, or more to taste
1/4 cup of BBQ sauce
3 tablespoons dark brown sugar
Salt and freshly ground pepper
1 cup chicken stock
1/8 cup chopped fresh cilantro leaves
Notes: try adding a fresh chile powder.
Preheat oven to 325 degrees F.
Cook bacon in a medium pot until half the fat has rendered (half cooked). Add the onion to the pot and cook until soft. Add the garlic and cook for 1 minute. Add the beans, honey, sugar, chicken stock, cilantro and BBQ sauce. Season with salt and pepper, to taste. Bake the beans, covered, for 30 minutes. Check to see if the mixture is dry and add more stock, if needed. Continue baking an additional 30 minutes. Uncover and bake for 15 minutes, remove from the oven. Let sit for 10 minutes before serving.
