1/2 cup unbleached flour
3/4 tsp salt
1 tbsp energy Baking Powder or 2 tsp normal
1/3 cup chopped walnuts
1/2 cup coconut cream or cashew cream (1 cup cashews to 1 cup water blend)
1/3 cup honey or 1/2 cup sugar and 2 tbsp water
1/2 cup mashed banana
1. Mix dry ingredients in a medium sized bowl. Add walnuts.
2. Mix remaining ingredients in 2 cup measure and add water if needed to equal 2 cups.
3. Briskly stir liquid into dry ingredients, and pour into an oiled loaf pan. Bake at 350f for 40-45 mins or until knife inserted comes out clean.
