Banana Oats Rusks

Notes:

Ingredients: 

Ground oats (quick cook) - 1 cup
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Generous dashes of ginger and cardamom
1/2 teaspoon baking powder
1 overripe banana, mashed
2 Tablespoons melted coconut oil

(Original recipe with 1/8 tsp salt + 1/2 tsp vanilla extract)


  1. Mix dry ingredients.
  2. Mix wet ingredients.
  3. Add wet ingredients to dry.
  4. Line a baking sheet with parchment paper.
  5. Form teaspoon size balls with the dough.
  6. Drop biscuits onto the parchment.
  7. Bake at 350° for 10 minutes (or until slightly golden).
  8. Store in an airtight container and refrigerate.
