1 egg
2/3 cup orange juice and milk
1/4 cup vegetable oil
1 teaspoon vanilla
2 cups flour
1/8 cup sugar
1/4 cup brown sugar, packed
1 tablespoon baking powder
1/2 teaspoon salt
1/2 mashed banana
FOR about 16 small muffins
In bowl, beat egg with the juice, oil and vanilla. Stir in flour, sugars, baking powder, and salt just until flour is moistened( medium speed ).
Stir in nuts and chopped apple. Fill greased muffin tins or paper muffin cups about 1/2 full.
Bake at 400° for 20 mins, no preheat
