Barefoot Contessa Meatloaf Recipe

Ingredients: 

1 tablespoon olive oil
3 larges yellow onion, chopped
1 teaspoon thyme, chopped
1 teaspoon kosher salt
1 teaspoon black pepper
3 tablespoons worcestershire sauce
1/3 cup chicken stock
1 tablespoon tomato paste
2 1/2 pounds ground beef
1/2 cup bread crumbs
2 extra larges egg, beaten
1/2 cup ketchup


 

  1. Preheat the oven to 325.
  2. Heat olive oil in a medium saute pan.
  3. Throw onions, thyme, salt and pepper and cook over medium to low heat, stirring occasionally. About 8 to 10 minutes,.
  4. Turn off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Permit to cool slightly.
  5. Combine chicken stock, ground chuck, onion mixture, bread crumbs, and eggs in a bowl and and mix lightly with a fork. Do NOT mash or the meat loaf will be dense.
  6. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper.
  7. Spread the catsup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through.
  8. Serve hot and enjoy!
