This makes a nice summer lunch or something for a picnic or potluck. Would be nice served with pita bread too.
1 20oz can mixed beans (kidney, black, chickpeas, black eyed peas) drained
1 small can (10oz) of chopped yellow or green beans
½ small English cucumber (diced, seeded and/or peeled if you want)
1 small garden tomato (diced and seeded)
Optional: 2 tbsp of chopped parsley, cashews or sunflower seeds
¼ cup bottled Italian dressing (or substitute a mix of 1/8 cup balsamic vinegar and 1/8 cup oil)
