Beer Batter Fish

This is so simple it's criminal. Most recipes have plenty of ingredients from baking powder and eggs or whipped egg whites and tons of spices. The truth is you need to do almost nothing. Follow this and it will be perfect every time! Great for onion rings, shrimp, veggies anything you like. I grew up in a town where everyone ate fish on Friday and every restaurant in town had a "Fish Fry Special", even the pizza joints. It's a Catholic thing. In a pinch you can substitute a light carbonated soft drink. I have made this with Vernor's Ginger Ale and it was yummy!

Ingredients: 

1 cup regular beer
1 cup white flour
1 pound of fish

THAT'S IT!!


  1. Mix equal parts of beer and flour and whisk together until you get a pankcake batter consistency.
  2. Cover and refigerate for about 3 hours, this lets the magic happen!
  3. Prepare fish by drying and seasoning to taste.
  4. Dip in flour and shake of excess then dip in batter and let excess batter drip off
  5. Pan Fry at 350-360 uintil golden brown and turn only once. Or deep frying is even better.
  6. Drain on papertowels or brown paper and season immediately with salt.
  7. Keep fish warm in a 200 oven on a wire rack.

Made it tonight with Vernor's Ginger Ale because we had no beer in the house (we don't drink) and it was perfect!!
