Bee's White Chili

Ingredients: 

1 lb bag great northern beans
1 yellow onion, diced
2 TB garlic salt
2 4oz cans green chilies
2 TB cumin
1 TB oregano
¼ tsp cayenne pepper
2 quarts chicken broth
1 lb cooked chicken breast, diced
1 cup fresh cilantro, chopped
½ lb Monterey jack cheese, shredded


Soak the great northern beans overnight in enough water for them to double in size.   The next morning:
  1. Dump water from beans, add all ingredients (except cilantro and cheese) to a slow cooker; cook on high until it comes to a boil, then reduce heat to low. Let cook all day.  About an hour before you are going to serve, add cheese and stir. Add cilantro right before you serve the chili.
