Bernies' Pesto Meatloaf

Ingredients: 

2lbs lean ground pork
salt & pepper to taste
1 tbsp olive oil
2 tbsp finely chopped garlic
1 cup bread crumbs
1/2 cup toasted pine nuts
1 cup basil - finely chopped, loosely packed
1/2 cup Parsley - finely chopped, loosely packed
1/2 cup grated parmesan cheese
1 egg, lightly beaten
Bernies fresh tomato sauce


  1. Preheat oven 400
  2. Put pork in bowl, add salt & pepper.
  3. Heat oil in small skillet. Add garlic & cook, stiring until its wilted
  4. Add to the pork: breadcrumbs, pine nuts, basic, parsley, parmesan cheese, & egg. blend well.
  5. Put mixture into standard six cup loaf pan. Pack it down and smooth over the top
  6. Place in oven & bake about 1hour or until internal temp registers 165degrees. 
  7. Remove from oven and let stand about 15 minutes before slicing and serving with fresh tomato sauce
