Black Pepper Chicken Chop

Ingredients: 

= CHICKEN MARINADE =
chicken thigh - 2x (deboned & pound)
dark Soy sauce
light soy sauce
Worchestershire sauce
Black pepper
white pepper

* marinade overnight

= BLACK PEPPER MUSHROOM SAUCE =
Kosher salt
Black peppercorns, coarsely crushed
Unsalted butter
Chicken stock or broth
Cognac
Heavy cream - 1 cup
Green peppercorns in brine, drained and slightly crushed
Button mushrooms - 6x (sliced)
Onions - 1/3 cup (chopped)


  1. Heat up butter & stir fry onions until fragrant
  2. Add cream + chic stock & stir
  3. Add mushrooms & other ingredients
  4. Grill or roast the marinated chic
  5. Top sauce over chic
