Blue Cheese and Walnut Tarts

Ingredients: 

Pastry Dough:
1 3/4 C all purpose flour
dash of celery salt
7 Tbsp unsalted cold butter, cut into cubes
1/4 C finely chopped walnuts
Ice cold water

Filing:
2 Tbsp unsalted butter
2 Celery stalks, chopped fine
1 Small leek chopped fine
8 oz Blue cheese
1 C cream or milk
3 egg yolks
salt and pepper
