Bourbon Chicken Wings

Ingredients: 

2 Tablespoons butter

1 Large shallot (minced)

3 Cloves garlic (minced)

4oz bourbon (you can substitute orange or pineapple juice for bourbon equal amount)

1/2 cup brown sugar

1/2 cup honey or agave nectar

1 tablespoon canned Chipotle peppers (minced)

8oz chili sauce (more if you like it spicy)

8oz barbecue sauce

3oz franks red hot sauce


Step 1 In a large saucepan over medium heat, melt your butter.             Step 2 Add to the butter the minced shallot, cloves and allow to sauté, for about 2 - 3 minutes. Stir in the bourbon, brown sugar and the honey to heat completely, this will take about 1 minute.              Step 3 Add the chipotle pepper, chili sauce, bbq sauce and the wing sauce and cook, stir occasionally for 2 minutes.      Step 4 Let this sauce mixture cool. Once cool you can adjust the sweet or spicy levels to your taste.       Step 5 Pour mixture into zip-top type bags containing the raw chicken wings, marinate overnight in the refrigerator.     Step 6 Pre-heat your oven to 425 degrees F. Spread your chicken wings on a silpat lined backing sheet and coat with any extra sauce. Use a cookie sheet for this method as it has a raised edge and the silpat makes for easy cleanup.                Step 7 Bake for 25-30 minutes, the exact time will depend on the size of the wings.
