I saw this pancake recipe in Jaime Oliver’s book that I had checked out from the library. I was interested in his idea of adding grated apple to the batter. When it was close to the book’s due date I hurriedly returned the book without writing down the recipe, but I think I succeeded in creating those pancakes from my vague memory; I did remember that you need 1 cup of flour, 1 egg, 1 coarsely grated apple and 1 cup of milk. Who wouldn’t love this recipe! Other ingredients and measurements were my guess, but my pancakes turned out great! I absolutely loved the fresh apple flavor. I enjoyed them with yogurt (I used Greek yogurt) and honey as suggested in the book and I loved it. I can’t believe I didn’t miss butter at all!

Apple Pancakes (makes 6~7 this pancakes the size in the picture)

Ingredients: 

1 apple coarsely grated
1 cup milk
1 egg
1 cup all purpose flour
1/2 teaspoon baking powder
1 tablespoon sugar
a pinch of salt

butter

Greek yogurt to serve
honey to serve
