3 cloves garlic - minced
1/4 cup diced red pepper
1 tsp. chopped chives
2 Tbsp. olive oil
2 Tbsp. butter
1 tsp. sugar
1/4 cup maple syrup
2 chicken breasts - cut into strips
3/4 cup chicken stock or broth
1/2 cup whipping cream (or lighter cream)
2 Tbsp mild curry paste
pinch of chilies (optional)
3 Tbsp cream cheese
salt and pepper to taste
3 cups cooked Penne pasta
Using a wok or large pan, saute onion and garlic in 1 Tbsp oil and butter for 2 minutes. Add curry and cook for 1 minute.
Add sugar to pan. Cook, stiring until sugar starts to caramelize, add maple syrup and cook for one minute.
Add chicken stock and cream. Boil until reduced by half. Add red peppers and chives. Set aside
Heat remaining Tbsp of oil ove rhigh heat, saute chicken until lightly browned, add salt and pepper
Add chicken to set aside mixture. Simmer for 2 minutes. Add cream cheese and stir well, add to cooked pasta, toss to coat
