Butternut Squash + Apple Quinoa Salad « the edible perspective

Ingredients: 

5c butternut squash, cubed
1 medium apple, diced [1.5c]
1c uncooked quinoa
3/4c cipollini onions, chopped
4c low sodium veggie stock
2T + 1T sunflower oil
1/4c + 2T lemon juice
1T honey
1.5t dried thyme
3/4t garlic powder
1/4-1/2t salt [plus more to taste]
