Cajun Baked/Fried Fish

Notes: 

A simple and easy way to prepare boring old fish. For an extra kick marinate it hot sauce!

Ingredients: 

4-6 fish filets, talapia, swai or catfish
1/2 cup yellow cornmeal
1/4 cup Cajun seasoning (Tony Chachere's)
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon paprika reserved
1 tablespoon Hot Sauce with 1/2 cup of milk


Mix hot sauce and milk and marinade for 15-30 mins.

Pre-heat oven to 400

Place all remaining ingredients in a zip lock bag and mix well.

Place filets one at a time in bag and shake well to coat.

Place filets in a refigerator for aprox 15 minutes to allow coating to set.

Line baking pan with foil and spray with no stick cooking spray.Bake in 400 for 15- 20 minutes.

Or pan fry with vegtable oil.

Serve with lemon wedges and or tartar sauce.
