3 firm pears (see note)
1/2 cup cider
1/2 cup white wine (or red)
¼ cup sugar
2 – 4 fresh thyme sprigs
2 2-inch pieces cinnamon stick
2 2-inch lemon peel, pith removed
12 black peppercorns
2 small bay leaves
