1 teaspoon Cabot Salted Butter
1 large sweet onion (such as Vidalia or Walla Walla), thinly sliced and separated into rings
1/2 teaspoon chopped fresh or 1/8 teaspoon dried thyme leaves
3 large eggs
3 large egg whites
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/4 teaspoon hot sauce (such as Tabasco)
1/4 cup frozen chopped spinach, thawed and squeezed dry
3 ounces Cabot 50% Reduced Fat Cheddar, grated & divided (about 3/4 cup)
