Caribbean Chili

I usually double this using 1 lb. of hot sausage and 1 lb. of ground beef. The original recipe added grated cheese the last 15 min. of cooking.

Ingredients: 

1 lb. ground beef
8 oz. tomato sauce (I use tomatoes pureed in food processor))
1 Tbs. or more chili powder
1 teas ground cumin
1/2 teas salt

1 can (15oz.) black beans, drained

1 large sweet potatoes,cubed

1/3 cup chopped raisins
2 plum tomatoes, chopped (x2)
2 large mild green chilis, seeded and chopped (x2)
1 large onion, chopped


Preheat oven to 350F.  Grease 2 1/2 - 3 quart baking dish (with lid).  Brown the beef in a medium skillet over medium heat until no longer pink.  Drain and discard fat.  (With lo fat grnd meat this usually isn't necessary).  Stir in tomato, chili powder, cumin and salt.

Spread the beans in an even layer in prepred dish.  Layer the potatoes over the beans.  Sprinkle with the raisins, tomatoes, chile and onion.  Spread the beef mixture over the vegetables. (When I double the recipe I use a large dutch oven and layer everything twice.)

Cover and bake 1 hour or more, until the potatoes are done.  Serve hot.
