Carnitas

Notes: 

Real Carnitas not faux Americanized shredded pork. Any real Mexican restaurant serves you chunks of braised pork and this is it.

Ingredients: 

4 pound boneless pork butt, fat trimmed a little
1 1/2 tsp salt
3/4 tsp pepper
1 tsp ground cumin
1 onion, peeled and rough chopped
2 bay leaves
1 tsp dried oregano
2 tablespoon lime juice
2 cups water
1 medium orange, juiced and keep the spent pieces


  1. The fattier the pork the better. Pork butt or shoulder is ideal, cut into small cubes about 1- 1 1/2".
  2. MIx all the ingredients in a dutch oven or crock pot and add the pork, stir and bring to a boil.
  3. Cook in a 300 degree over for 2-3 hous, or until tender. Cook in a crok pot on on high for 4 hours.
  4. Remove the meat and reserve the remaining sauce.
  5. Reduce the sauce on the stove unti thick.
  6. Pour the sauce over the meat and mix well.
  7. Spread meat out in a single layer on a foil lined baking sheet.
  8. Broil on high for 5-8 minutes until golden brown and crispy.
