Carrot Cake Muffins


2 flaxseed eggs (or you could also just use two large eggs):
2 tablespoons ground flaxseed
6 tablespoons hot water

2 cups blanched almond flour*
1/2 cup unsweetened finely shredded coconut
1 teaspoon baking soda
1/2 teaspoon sea salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/4 cup maple syrup (or honey)
1/4 cup grape seed oil (or olive oil)
1 teaspoon vanilla extract
1 cup shredded carrot
1/4 cup walnuts, roughly chopped (optional)
1/4 cup golden raisins (optional)
