1 tsp grated or minced ginger root
1 tbsp toasted sesame oil
1 tsp umeboshi plum vinegar (or brown rice vinegar)
gomasio or toasted sesame seeds
sliced avocado
2 toasted nori sheets
1. Grate carrots (after peeling) and place into a medium-sized bowl. 2. In a small bowl, add ginger, sesame oil, and vinegar. Whisk with a fork until combined. 3. Add sesame oil dressing to the carrots and mix until well combined. Sprinkle with gomasio or toasted sesame seeds and serve or... 4. Lay carrot salad along the bottom of a nori sheet, top with sliced avocado, roll up the nori sheet like sushi, slice in half, and serve!
