1 tbsp baking powder
3/4 tbsp salt
1/2 tsp black pepper or 1/4 tsp cayenne pepper
1/4 cup cold butter, cut into cubes
1 cup old cheddar cheese, grated
1 cup cold milk
Preheat oven to 450 degrees F.
Grease a baking sheet.
Using a fork, stir together flour, baking powder, salt and pepper in a large bowl.
Work in cold butter until the mixture is crumbly.
Stir in cheese.
Make a well in thr center of the mixture.
Pour in milk and stir until just moistened.
Turn out onto a floured cutting board.
Divide in half and pat each section into a 6" (15cm) circle about 3/4" (2cm) thick.
Cut each into 6 wedges.
Lift wedges onto greased baking sheet, placing about 1" (2.5cm) apart for crusty-sised scones or 1/2" (1cm) apart for soft-sised scones.
Bake on a rack above the oven center until golden, about 10-12 mins.
