3 cups bread flour, plus more for kneading
1 cup whole-wheat flour
1 tablespoon sugar
1 1/2 teaspoons fine salt
1 cup oats, finely ground in a blender or food processor
1 cup lukewarm water, 100-115 degrees
Cooking spray
