Chicken and mushroom pies with rice crust

Ingredients: 

1/2 cup basmatic rice, dry, (100g)
1 small egg, lightly beaten
400 g lean chicken breast, fat trimmed
1 whole leek, (pale section only), thinly sliced
100 g fresh mushrooms, (button), quartered
100 g swiss brown mushrooms, quartered
1/4 cup plain flour, (35g)
1 1/3 cups chicken stock, (330ml)
1 tbs Weight Watchers , Sour Cream
1 tbs fresh thyme
1 individual reduced-fat puff pastry, just thawed, quatered
