Serve this with Red Onion Raita-Combine 1 container (6 oz) reduced-fat plain Greek Yogurt, 1/2 cup diced red onion, a pinch each of salt and pepper and 1 Tbl. lemon juice.

2 tsp. veg oil
6 bone-in chicken thighs
1 tsp. salt
1/8 tsp. black pepper
1 large onion, chopped
3 cloves garlic, chopped
2 cups white long grain rice
1 can (14 1/2 oz) reduced sodium chicken broth
1 tsp. garam masala
1/2 tsp. ground giner
1 package (10 oz) frozen peas and carrots, thawed
1/4 cup cilantro, chopped
1/4 cup cashews, coarsely chopped
