1 10 ounce package frozen spinach
3/4 cup finely chopped almonds
4 small whole chicken breasts boned and skinned
1 1/2 cups ground breadcrumbs
3 ounces Boursin cheese
Slowly melt 3 ounces Boursin cheese over low heat stirring constantly. Mix With chopped spinach and add chopped almonds. Open chicken breasts and flatten.
Divide cheese mixture evenly between breasts. Roll up tightly as a jelly roll and close ends. Roll in breadcrumbs. Bake at 350 for about 35 minutes. Time will vary depending on size and thickness of chicken breasts. Melt remaining cheese and pour evenly over chicken serve. Freezes well.
