Chicken Pot Pie

Ingredients: 

2 chicken thighs, 1 chicken breast (boneless)
2 cans of low salt chicken broth
1/2 cup dry white wine
6 Tablespoons olive oil
6 Tablespoons flour
6 medium carrots - sliced
1 celery root - peeled and cut into pieces
2 garlic cloves crushed
3 garlic cloves chopped
16 small potatoes - quartered
13 oz bag of peas
20 small Bella mushrooms - halted or quartered
2 small onion sliced thinly
Salt
Pepper
Thyme and rosemary
Pie crust or puff pastry to top


  1. Cook chicken in broth with crushed garlic for 30 minutes
  2. Remove chicken and cook vegetables (not onions or mushrooms) until just tender
  3. Strain the broth and recover 3 cups
  4. Cook onion in the oil until tender then add garlic and cook for a few minutes
  5. Add flour and cook for 3 minutes
  6. Add chicken broth and wine to make a sauce
  7. Sautee mushrooms until browned and no longer moist
  8. Mix together and add salt, pepper, thyme and rosemary to taste
  9. Put into serving dish and top with pastry crust (it does not need to cover the entire top
  10. Bake at 400 for 20 to 30 minutes
  11. Let rest 5- 10 minutes
