Chicken in Red Wine


Stew, Pie, Beer, – word association this time of the year and words that are common place in my local boozer. I can’t imagine anyone walking into my pub and asking for a Caesar salad in November which is why good pubs that ply good food almost always have some form of stew ….like this one! If you’re not into waiting four hours for your shin beef stew or Ox Tail pie then give this a whack, it’s done in 30 minutes and tastes like it cooked out for a few hours


2 bowls
4 Chicken thighs, skinned, boned and halved
100 grams of new potatoes part boiled (5minutes)
1 medium red onion quartered
1 glass good red vino
1 cup chicken stock
1 tbs creme fraiche
Good handful of chopped curly parsley
1 tpbs garlic powder
1 tps of fresh thyme
1/2 small swede finely diced
salt and pepper
