Chicken Saag

Ingredients: 

4 boneless skinless chicken breasts
2 T olive oil
1 chopped onion
2 T tomato paste
2 lb fresh spinach (or 20 oz thawed frozen)
2 T garam masala spice
1 C half-and-half
jasmine rice


  1. Cut chicken breasts into 1" pieces; season with salt and pepper.
  2. Place oil in large pan over medium heat. Brown chicken pieces on all sides until cooked through, 8-10 min.
  3. Remove chicken and set aside. In the same pan, saute a chopped onion in a little more oil until it's translucent.
  4. Stir in tomato paste, spinach, stirring until wilted.
  5. Add garam masala and saute 8 min.
  6. Stir in half-and-half; add chicken back in and heat until warmed through.
  7. Season with more salt and pepper and serve over rice.
