Chicken Salad with Roasted Red Peppers

I use fresh red peppers in this instead of roasted, sometimes. It's delicious.


2 tsp Dijon mustard
1 tsp white wine or sherry vinegar
1/2 garlic clove
2 tbs extra virgin olive oil
1/2 roasted chicken, skinned, meat removed from the bone, roughly chopped (about 1 1/2 cups)
1 stalk celery, chopped
3 tbs. chopped roasted red peppers
Coarse sea salt or kosher salt and freshly ground black pepper
