11/2 lbs of Organic Free Range Chicken
2 garlic cloves
1 tbps sesame or coconut oil (good for high heat cooking)
1-2 tbsp cumin
1-2 tbps coriander
2 tbsp red chili
1 tsp fennel seed
2/3 can chopped tomatoes (can substitute 2/3 can tomatoe paste and chicken stock)
1 small onion
1 small head of cauliflower, cut into small florets
2 cups shredded carrots (food processor)
2 cups shredded zuchinni
2 cups shredded yellow squash
2 tbsp chopped cilantro for garnish
sea salt to taste
