4 scallions, chopped
3 cloves garlic, minced
1 15-ounce can chickpeas, rinsed

2/3 cup wheat germ, divided
3 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
4 6-inch whole-wheat pita breads, warmed
8 slices tomato
1 cup baby spinach
4 tablespoons nonfat plain yogurt
