Chiles Rellenos (Stuffed Anaheim Peppers)

Anaheim Peppers stuffed with meat, cheese and relleno sauce

Ingredients: 

26 oz can whole green chilies (usually contains 16-20 chiles
12 eggs, separated
1/2 cup flour
1/4 tsp baking powder
4-6 cups grated cheddar cheese
1 lb hamburger
cooking oil

Rellenos hot sauce
1 diced onion
1-2 cloves garlic
2 TBS oil
15 oz can tomato sauce
1 quart whole tomatoes, crushed
1/2 tsp dried oregano
red pepper flakes to taste (1 tsp)


  1. Make rellenos sauce (best if made several hours ahead)  In medium sauce pan saute onion and garlic in oil until clear. Add tomoatoes and tomoato sauce. Toss in red peeper and oregano. Cook, do not boil for 10 minutes. Set aside.
  2. Split chiles and rinse with water. Drain
  3. Brown hambuger and drain. Salt and pepper to taste. Add small amount (1/4 cup) sauce to hamburger.
  4. Beat egg whites in large bowl until very stiff. Fold in slightly beaten egg yolks. Mix flour and baking powder and quickly fold into whites.
  5. Spread whole chiles and fill with 1 TBS each hambuger and cheese. Fold and dip into batter, then into a heavy fry pan with hot cooking oil. Brown on each side until golden.
  6. Transfer to backing dish contaiining rellenos sauce. When all are fried, sprinkle with more cheese and put into barely hot oven (200 degrees) until cheese menlts.. 20-30 minutes.
