Chinese Sesame Peanut Noodles

Ingredients: 

• 1 lb spaghetti / vermicelli / other long noodles
• ½ cup and 2 Tbsp sesame oil
• 6 Tbsp peanut butter
• 9 Tbsp soy sauce
• 6 Tbsp sesame paste
• 2 Tbsp sherry or other wine
• 4 tsp white vinegar
• ¼ cup honey
• 4 medium cloves garlic
• ½ cup hot water
• 2 carrots
• ½ cucumber
• 1 cup snow peas
• 2 scallions
• ½ cup roasted peanuts
• Cilantro


Directions

  1. Boil noodles in a large pot of unsalted water until al dente following package directions.
  2. Drain noodles immediately and rinse with cold water.
  3. Drain noodles well and toss with 2 Tbsp sesame oil to prevent sticking.
  4. Finely mince garlic.
  5. In a medium bowl, combine peanut butter, soy sauce, sesame paste, sesame oil, sherry, vinegar, honey, and minced garlic. Mix thoroughly. If necessary, thin with hot water.
  6. Julienne carrots, cucumber, snow peas, and scallions.
  7. Coarsely chop peanuts and cilantro.
  8. Mix noodles with sauce and julienned vegetables. Top with peanuts and cilantro.
