Chinese Style Chicken & Corn Soup

Ingredients: 

2 teaspoons Sesame Oil
3cm cube of ginger, grated
2 cloves of garlic, crushed
2 tablespoon white wine
3 cups chicken stock
1 cup water
1 cup shredded chicken
1 tin creamed corn
1 tin corn kernels or 200g frozen corn
Small bunch of green onions
¼ cup each of water and cornflour
1 egg, lightly beaten
Salt & pepper to taste


Directions

  1. Lightly saute ginger & garlic in sesame oil
  2. Add wine and reduce
  3. Add stock, water, chicken, corn, green onions, and season to taste
  4. Bring to the boil, then slowly stir in combined cornflour and water
  5. Boil to thicken
  6. Reduce heat and slowly stir in egg.
  7. Season to taste.

Servings: 3-4

Preparation Time: 30 minutes
