Chocolate Chip Oatmeal bars

Notes: 

gluten free, can use wheat flour

Ingredients: 

1 1/2 cup coconut oil
1 1/2 tsp stevia extract (equiv to 1 cup sugar)
2 TBS mollasses
2 eggs
2 tsp. pure vanilla extract
4 tsp. strong coffee or coffee brandy
1 tsp. baking powder
1/2 tsp. sea salt
4 cups oat flour
1/2 cup protein powder
1 cup semi-sweet chocolate chips
1 cup of dried unsweetened coconut
optional 1/4 cup nut butter


Directions

  1. Preheat oven to 325F.
  2. In large bowl, by hand, beat oil, sugar, and molasses, beating till smooth.
  3. Add egg, vanilla, coffee, baking powder and sea salt, beating till smooth and well combined.
  4. Stir in flour till it's absorbed
  5. add chips and coconut till ingredients are well distributed.
  6. spread out in a 13 x 9 pan Bake 10-12 minutes, or till just barely done. Cool on wire racks.

Servings: 8 big bars

Preparation Time: 15 minutes
