Chorizo with Potatoes and Kale

Ingredients: 

1 tablespoon olive oil
8 ounces ground chorizo
5 red potatoes, sliced 1/4 inch thick
2 leeks or 1/2 bunch green onions (white and light green parts), cut into thin slices
1/2 bunch kale (about 2 cups), roughly chopped
Salt and pepper


Heat oil in a large skillet over medium-high heat. Add the sausage and cook, tossing occasionally, until browned, 3 to 4 minutes.  Add the potatoes and cook, stirring occasionally, for 10 minutes. Add the leeks, kale, ½ cup water, ¾ teaspoon salt, and 1/8 teaspoon pepper. Bring to a boil.  Reduce heat and cook covered for 5 minutes.
