Ingredients: 

1 1/2 lbs skinless chicken thighs, about 6 thights
1 1/2 t. kosher salt, divided
1/4 t. freshly ground black pepper
1 T. canola oil
8 medium shallots, thickly sliced
1 medium garlic clove, minced
2 c. reduced-sodium chicken broth
1/2 c. apple cider
1 T. apple cider vinegar
2 t. minced fresh sage (or to taste), divided
4 sprigs fresh thyme
1 1/2 lbs peeled sweet potatoes, cut into 3/4-in cubes
