MARINATED PORK CHOPS
1 cup apple cider
1/2 cup pure maple syrup
1/4 cup bourbon
2 tablespoons light brown sugar
1 tablespoon Woodland Bitters
2 thyme sprigs
2 garlic cloves, smashed
Four 3/4-pound pork rib chops
GLAZE
1 cup apple cider
1 cup pure maple syrup
1 teaspoon Woodland Bitters
Kosher salt and freshly ground pepper
COMPOTE
4 Granny Smith apples, peeled and cut into 1/2-inch dice
1/2 cup apple cider
1/4 cup dark brown sugar
1 tablespoon bourbon
1 tablespoon butter
1 teaspoon fresh lemon juice
1 teaspoon Woodland Bitters
1 cinnamon stick
1 tablespoon vegetable oil
Kosher salt and freshly ground pepper
