1 large onion, diced
1/2 cup apple cider
1/2 tsp dried thyme
1/2 tsp rosemary
1/2 tsp ground black pepper
1/2 cup chopped fresh parsley
Directions
Mix all ingredients except parsley in a 3-qt or larger slow-cooker.
Cover and cook on low 7 to 8 hours or until vegetables are tender. Stir in parsley.
Good served over noodles.
