Over the years it lapsed into the back of a notebook, until I fixed it for Zach on a whim a few months ago, and since then it has become a regular fixture in our house... ½ c olive oil
2 onions, chopped
2 eggplants, diced
½ c honey
½ c red wine vinegar
½ tsp cumin
½ tsp curry powder
cayenne pepper to taste
salt and black pepper to taste
2 tbsp cilantro, chopped
