Cinnamon Raisin Muffins

Ingredients: 

2 cups whole-wheat pastry flour or unbleached all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup raisins

1 cup apple juice
1/2 cup applesauce
2 tbsp of canola oil


1. Preheat oven to 350 degrees

2. Whisk first ingredients together (salt, baking soda, baking powder, cinnamon, flour--except raisins)

3. Mix together a cup of apple juice, 1/2 cup of applesauce, and 2 tbsp of canola oil

4. combine all ingredients

5. Put in muffin tins and bake for 20-25 minutes 

6. Enjoy!!

 

Each muffin is about 128 calories!
