2 ears of corn or two cups of frozen corn
1 tbsp butter
1/4 cup minced vidali onions
1 tomato diced
2 tbsp cilantro
1 lime, juiced
salt
pepper
4 oz manchego cheese, grated
1 cup of cooked quinoa
