Crab-stuffed Orange Roughy with Mango Salsa

Ingredients: 

6 Orange Roughy fillets
1 pound fresh crab meat
2 eggs
1/4 cup mayonnaise
1 1/2 T Old Bay seasoning
1 red onion diced small, divided
2 T fresh parsley, chopped
2 T melted butter
1 mango, peeled and diced small
3 limes, juiced
2 T honey
2T fresh cilantro
2 c heavy cream
2 lemons juiced
salt and pepper


Directions

  1. For mango salsa, combine diced mango with half of diced red onion, lime juice, honey and cilantro.  Set aside.
  2. For lemon butter sauce, combine heavy cream with lemon juice; eason with salt and pepper. Cook over meadium heat until reduced and it coats the back of a spoon.
  3. Rinse and dry fish. Preheat oven to 400 degrees. Mix crab meat, eggs, mayonnaise, seasoning, half of red onion, chopped parsley. Add salt and pepper to taste.
  4. Layer crab mixture on top of each fillet. Roll fillet. Brush with melted butter. Place on baking sheet lined with parchment paper. Bake 10 minutes or until fish is tender.
  5. To serve top fish with mango salso, drizzle with lemon cream sauce.
