Cranberry Fruit Nut Bread

Notes: 

A double batch will make 6 mini
loaves and 2 fruitcake size loaves

Ingredients: 

1 cup fresh or frozen cranberries - coarsely chopped
1/2 cup chopped nuts
1 Tbs grated orange peel
2 cups flour
1 cup sugar
1 1/2 tsp baking soda
2 Tbs shortening
3/4 cup orange juice
1 Egg beaten


1. Grease and flour pan 9 x 5 x 3

2. Prepare cranberries, nuts and orange peel and set aside

3. Mix together flour, sugar, salt and baking soda

4. Cut in shortening

5. Stir in juice, egg and orange peel just to moisten

6. Fold in cranberries and nuts

7. Cook 1 hour @ 350 deg.

8. Cool 15 minutes before removing from pan
