Ingredients: 

2/3c quick-cooking steel-cut oats
kosher salt & fresh pepper
1T e-v olive oil + more for drizzling
1/4c peppadew peppers, sliced
2 lemon wedges
1 clove garlic, grated
1/3c finely grated Parmesan + more for servings
2 lg. eggs
1c watercress, tough stems removed
