Creamy Quinoa Thai Salad with Peanut Butter + Lime Dressing (vegan, grain free, gluten free)

Ingredients: 

2 cups cooked quinoa
½ cup carrots, sliced
½ cup sugar snap peas, halved
2 medium scallions, sliced
½ cup peanut butter
2 tablespoon fresh squeezed lime juice
½ teaspoon red chili pepper flakes
2 cloves garlic, crushed
½ teaspoon fresh ginger, grated
1 tablespoon vinegar (e.g. apple cider vinegar)
salt to taste
