Curried Chicken

Notes: 

* Makes 4-6 Servings

* Serve with rice, green beans, & mango

Ingredients: 

1 cup diced onion
1 1/2 tsp minced garlic
1 Tbsp grated ginger
2 tsp curry powder
2 tsp oil
1 Tbsp tomato paste
1/2 cup chicken broth
2 Tbsp quick-cooking tapioca
5 or 6 boneless, skinless chicken thighs, trimmed and each cut into 4 pieces
Salt and pepper
1 (5 oz) container plain Greek yogurt
Toppings: cilantro, raisins, almonds
